    سوربيتول: السوربيتول -أو غلوسيتول- هو أحد أنواع السكريات الكحولية المنتجة من سكر الغلوكوز العادي التي تتحلل في الجسم ببطء. وتتم إضافتها إلى بعض أنواع شراب الكحة Cough Syrups الخالية من السكر. كما أنها تُستخدم كمادة مُحلية، بديلة للسكر، تُضاف إلى أصناف المنتجات الغذائية الخالية من السكر، مثل العلك أو الحلويات أو الأطعمة أو الآيسكريم -البوظة- أو المشروبات الغازية وغير الغازية أو غيرهما. وتجدر ملاحظة أن هذا النوع من المُحليات الصناعية يحتوي على كمية من الطاقة، إذْ إن الغرام الواحد منها يُعطي حوالي 2.6 كالوري -سعرة حرارية- ، هذا بالمقارنة مع الغرام الواحد من السكر العادي أو النشويات الذي يُعطي الجسم طاقة تُقدر بـ 4.2 كالوري. وثمة استخدامات أخرى لمادة سوربيتول، في مستحضرات التجميل والصناعات الغذائية وبعض أنواع الأدوية.

    بكتين: البكتين -بالإنجليزية: Pectin- -أصل الكلمة من الإغريقية πηκτικός - بيكتيكوس بمعنى متخثر- عبارة عن عديد سكاريد يدخل في تركيب الجدار الخلوي الرئيسي في النباتات الموجودة على سطح الأرض. عزل البكتين لأول مرة ووصف من قبل العالم الفرنسي هنري براكونو Henri Braconnot عام 1825.يتوافر البكتين تجارياً كمسحوق يتراوح لونه بين الأبيض والبني، ويستخلص بشكل رئيسي من الحمضيات، ويستعمل في مجال الأغذية والصناعات الغذائية كمادة ماسكة للقوام gelling agent خاصة في المربيات والحلوى الهلامية -جيليه jellies-. يدخل البكتين أيضاً في مجال الحلويات وكمادة مثبتة في عصائر الفواكه وكمصدر للألياف الغذائية.
